Casanova’s secret ingredient
A cooking workshop at the Italian Cultural Institute of Prague.

Giacomo Casanova is most known for his love liaisons, but few people know that he cultivated an equally intense passion for good food, decadent dishes and sensual ingredients.
This brilliant 18th century intellectual was a regular in Prague, and during his visits he would often stay in the beautiful Baroque building that today is the home of the Italian Cultural Institute.

To honor his original contribution to the Italian culture, the first cooking workshop organized by Mrs. Maria Teresa D’Avino, wife of the Italian Ambassador in Prague, has presented one of the recipes and ingredients Casanova favored the most: Truffle Risotto.

The award winning chef Davide Lagomarsino has thoroughly demonstrated how to prepare an authentic Italian black truffle risotto giving helpful advices on which are the best types of rice to use, what ingredients can enhance the flavor of this dish and what are the techniques and tricks to obtain a perfect risotto “all’onda”.
The black truffle risotto has been prepared using authentic Italian ingredients and with the aid of the Kenwood Cooking Chef, a powerful kitchen machine that incorporates induction cooking to all the standard features, giving a revolutionary new dimension to the art of cooking.

Mr. Flemming Laugesen, one of Prague's most competent sommelier, has then given some insights on what are the wines to accompany truffles and truffle risotto.

The workshop took place last 28th November in the Italian Cultural Institute, in the heart of Mala Strana, organized under the auspices of the Italian Embassy, and was attended by the members of the Diplomatic Ladies Association of Prague, members of the Casanova Foundation, journalists, artists and entrepreneurs.

Mrs. D’avino plans to organize such culinary events on a regular basis, in different locations and with different Prague based Italian chefs, with the aim of promoting Italian cuisine and food culture in the Czech Republic and among Prague’s diplomatic circles.

The ingredients of the recipe can be purchased at La Gastronomia Ligure.

A selection of wines to accompany truffle-based recipes can be purchased at Via del Vino.
