Brewing has been a serious business in the Czech Republic since 1088. This Old Town micro-brewery - at the Three Silver Roses - was established as far back as 1405! Recently the tradition was revived and was awarded the status of a monastic brewery for the Dominican Order. The huge gleaming brass ‘kettles’ where the malt is first mixed with water greet you at the entrance with their fragrant aroma. Then their are a further 4 stages culminating in 40 days of fermentation producing Lager, semi-dark lager, dark lager, the Monastery special and American light. Each has its’ own distinct characteristic which you can sample. Sit at the ground, first or second floor with its original 14th century ceiling and great views on all sides. The traditional Czech menu offers good value meals and beer snacks. They also have a shop across the street selling their own range of bottled beer.

Appetizers: Smooth pâté of duck livers and wild mushrooms (120Kč). Our very own steak tartar with grilled garlic bread (195Kč).
Fish: Roasted pike perch in butter with garlic, thyme, chive potatoes (260Kč).
Meat: A pound of roasted pork ribs in dark beer served with spicy sauce, homemade bread (270Kč). Confit leg of rabbit with herbs and barley risotto with marjoram, wild mushrooms (210Kč). The brewery beef burger with crispy bacon, Emmental cheese, tomatoes and pickled gherkins with French fries (220Kč). Roasted knuckle of pork served with horseradish, coarse grain mustard (290Kč).
Desserts: Old Bohemian strudel with plums and poppy seeds (85Kč). Baba au Rhum with vanilla sauce (110Kč).
